Raised Waffles

These are just wonderful. It takes a long time to cook enough for everyone unless you have multiple waffle irons, so they're best for small groups only.

1/2 cup warm water (100-110 deg)

1 pkg Dry active yeast

2 cups warm milk (100-110 deg)

1/2 cup (1 stick) salted butter, melted and then cooled (100-110 deg)

1 tsp Sugar

2 cups flour

2 eggs, beaten

1 4 tsp. Baking soda

Place water in a large mixing bowl and sprinkle with yeast. Let stand for five minutes to dissolve. Add milk, butter, salt, sugar and flour to yeast mixture and beat until smooth and blended. Cover bowl with plastic wrap and let stand overnight at room temperature.

The next morning, preheat waffle iron. Just before cooking waffles, add eggs and baking soda and stir until well mixed. Pour about 1/2 to 3/4 cup batter into very hot waffle iron and bake until waffles are golden and crisp. Serve hot. The recipe makes 6-8 waffles.

People will want 2 large waffles each.
